First and foremost, I love the Chrono Trigger soundtrack. The whole damn thing. It's amazing.
The Guilty Gear series also has some bitchin' music.
So does this fighting game Galaxy Fight.
And, I was obsessed with the Samurai Showdown 3 soundtrack when I was 17. Literally. I'd listen to it for hours on end.
Your thoughts/ faves...

Almost everything by Hitoshi Sakimoto
Absolutely everything by Yoko Kanno
Most everything by Akira Yamaoka
At least half of all the music ever made for those old Amiga games

YES. Capcom's music will forever have a place in my heart as well. If anything, right now, I'm madly searching for the Street Fighter EX Plus Alpha soundtrack. I know, the game wasn't super great, but, I love the soundtrack. Speaking of SF, that was the first game out there that I'd turn on just to listen to the sound test. Ryu's theme always moved me, and will most likely continue to for many years to come.
The Megaman X soundtrack was also another game that had such an amazing soundtrack. I remember hearing Zero's theme and just thinking "Yes (claw gesture with right hand)."
And, yeah, I dunno why, but, Konami's TMNT games always had bitchin' soundtracks. I especially love the TMNT: Tournament Fighters (for the SNES) soundtrack.
If only I can get these in MP3 format...

I've been a member of VGM since 2002. Though I don't go there much any more (and not at all to their boards), I still say that some of the MIDI remixes/remasteries are done extremely well. You just have to find that golden nugget artist that's worth digging even MIDIs for.
Suffice to say, my favorite artist there is, by and far, Tsu Ryu. If you can get ahold of any or all of his MIDI work for VGM, do so. I can guarantee you won't be disappointed. I've also commissioned him to do Valis work in MIDI and/or MP3 (he does chiptunes - http://www.myspace.com/tsuryu), but since I don't talk to him very often, I won't know if he's done anything for months at a time.
As for what music I actually like, I pretty much love all game music, but I love music that utilizes vocals with vocoders and/or anything epic (themes like Dr. Wily Stage 1 - MM2 (NES), any Street Fighter theme, etc.). My favorites change all the time, but as of late it's been, oddly, Ragnarok Online BGMs and Electric Six. =P

For me, Final Fantasy, anything 7 and back, some after, but I hate most of those games. I have a ton of video game tracks, it's hard to say a favorite. A lot of good stuff out there.
If that's not enough for you, if you want to try your luck at finding some arcade track, some MAME music can be played back with M1 http://rbelmont.mameworld.info/?page_id=223 I have recorded some game tracks this way.

Now that was epic, Soldier. If only all of the vocal adds were as awesome as that one, then I'd totally agree with you. Since it isn't the case, I can only agree with you when they're as good as that Ken Remix.
BTW, isn't it kinda odd that Capcom didn't start naming their themes until Street Fighter III? After all, Konami's almost always named their stage themes ("Vampire Killer" anyone?), so why hasn't Capcom? XP

My favorite games for music are Ys books I & II, and Ys III. on PC Engine. I like a lot of Squaresoft's music from the 16 bit era, namely FF II & III (SNES) and Secret of Mana. But NES music is my favorite overall, I still listen to the sounds of Ninja Gaiden, Castlevania II, Life Force and lots of others today.
I don't know if it's just me, but I think the compositions for old game music were much better than what we have today. The tunes written for the blips and single tones of an NES were melodic and catchy, just good music. The game soundtracks we have nowadays are all generic metal or that overused orchestra/chanting BS. Oh, and heavy tomtom drums during action parts, just like movies.
I mean, it's been a long time since I've played a new game and even remembered the music.

I'll give you cookie points if you can tell me who originally composed the music for Ys Book I & II. ^_^
But looking subjectively at your post, I have to say that the music isn't necessarily better now than it was then or vice versa. What you have to look at is that they're two completely different styles of music.
Back in the NES days, they didn't have quite the power to work with in sound. Four channels were all they had (crack your 4chan jokes now. ), so they didn't have much to work with. The greatness of such music is that composers were still able to compose entire symphonies' worth of music with just those four channels of sound. "Bloody Tears", "Wily Stage 1 (MM2)", and "Overworld (LoZ)" are all testaments to the power of composers in that period. Powerful composers today wouldn't exist at all if it weren't for the efforts of such people as Nobuo Uematsu, Yuzo Koshiro, and Motoi Sakuraba. Because of that, the music in the games we have today are much higher in quality and have a far more diverse style. We could have the Epic Symphony as heard in Ys VI to the trance and house tracks of Midnight Club, all because Uematsu could create a symphonic sound with just four sound channels and Koshiro could make chiptunes sound like club music on an 8-bit cartridge.
Of course, with such limited power, composers HAD to do something to make it worthwhile. Otherwise it would turn a player from an otherwise good game. So they had to make catchy melodies and rhythms. The other thing is that the market was over a hundred times smaller in the US for the NES than it is for the PS3, Wii, and 360. They couldn't put out something with music like GTA or Madden has because it's too generic, as you say. So of course, the actual quality of music as a whole is better in the NES era since there was so much riding on it.
However, to say that the music in today's gaming industry is generic is a rather ludicrous. The music in many of today's games is now of better sound quality, and with the old composers joined by the new, we now have the ability to create a much larger variety of music today. Instead of trying to tailor to a small niche of players, the audience is now a very large percentage of the world and not just niche groups of people scattered about a few select countries and regions. That said, composers have to cater to all the different tastes in music in their games. Such as it is, we have rap, rock, and hip-hop in GTA games and techno, rave, and trance music in Midnight Club. We have games like DDR and ParaPara because of the wide variety of music that can be programmed into a game these days. Overall, the music of the gaming industry hasn't seen finer days. From blips and bleeps on the NES to real symphonic sounds on a PS2, the music industry has progressed a lot. While I do agree that a lot of modern gaming music isn't as recognizable or memorable, the fact is that the vast majority of it is overlooked or underrated because there are so many other games with great music that it's hard to just take one aside and say it stands out. While the themes to Zelda and Mario are unforgettable and highly recognizable, be they 8-bit or 128-bit in style, themes to games such as Skies of Arcadia, Halo, and others are pretty difficult to miss too. In fact, during my tenure as an employee of Gamers, Inc. in Omaha, all I heard about the first couple weeks after Orange Box was released was how good the music in Portal was. Not nearly as much about Half-Life 2 or the other games in the Box, but about Portal and how good it was with special reference to its soundtrack. That speaks volumes in how memorable game music can be even today.
As you can see, I'm very passionate for video game music. I'm sorry if you were totally thrown off by the Lv. 8 Wall of Text, but my knowledge and love for all game music is immense. <3~
